A few nights ago we attended a Pancake Dinner for our local Boy Scout troop. Being back in his element (he use to be a Boy Scout himself), Mike decided that he was going to make dinner tonight! I LOVE when he cooks. He said that it brought back memories of when they would go camping and his troop had to cook for themselves. They would cook these meals around the campfire and usually it was cold out and the meal was a two purpose meal. One: it was dinner and Two: you ate this meal in a pouch (which made clean up easy) and it came straight off the campfire and it would keep you warm.
Tonight our meal consisted of whatever we could find in our fridge. Mike used the following ingredients for our meal:
2 lbs. chicken breast cutlets – cut into bite size pieces
5 potatos – pealed and cut into bite size pieces
3 carrots – pealed and cut into bite size pieces
1/2 white onion cut into small pieces
1 Green Bell Pepper
1 Red Bell Pepper
1/2 package of whole mushrooms
1-2 teaspoons of butter (if you don’t want to use butter you can substitute Olive oil)
Salt, Pepper, dried thyme, garlic powder and a few sprigs of rosemary – all of this is to taste
Everything is put onto aluminum foil and you fold the foil to make a pouch. Cook them at 375 degrees for 5o minutes to an hour.
Mike made individual pouches for everyone knowing that not everyone in our family likes all the veggies. My contribution to this meal was to make Basmati Rice for a side. This meal is usually made over a campfire or on a grill so you get that smokey taste but since the weather outside was not cooperating for us to cook outside today, cooking in the oven worked just as well.
I must say that this meal was quick, easy and oh so good! I love when Mike cooks and he always surprises us when he does. Even our pickiest eater ate all her food and that is saying a lot!
