For years I have LOVED when my sister-in-law would bring her pasta salad to family dinners. It is so simple but so good. This is the one side dish that Bella will eat and eat and eat. This week I was having a hard time deciding what to make for dinner and then I thought about this pasta salad. It is so easy to put together. Here are the ingredients –
1 Box Bow Tie Pasta
1 Red Bell Pepper
1/2 Red Onion
1/2 Broccoli (torn to small pieces)
1 cup Cherry Tomatoes
1/2 bottle of Kraft Sundried Tomato Dressing
Shredded Parmesan Cheese
First – I cook the pasta to al dente and rinse with cool water to stop the cooking process. I then place into a bowl with a lid (or you could cover with cling wrap or aluminum foil) and place in the fridge to cool (usually an hour)
Once the pasta is cool I start cutting the veggies that go into the salad. I cut mine as small as I can as to not over power the salad with huge chunks of onion or bell pepper. After I am done cutting everything, I put it all into the bowl with the pasta and pour in the dressing and cheese. I then close the lid and give everything a good shake to mix it all up.
It is so easy and it tastes so good. You can add less or more of the dressing depending on your taste. This is the perfect summertime pasta since it isn’t too hot and can be eaten with just about anything or just by itself (I like it that way). I see myself making this a lot this summer when we BBQ.
