Since it’s summer and I am always looking for something easy and quick to feed the family, I decided to try chicken salad. I must admit right now, I do not like Mayo! I know that some of my favorite foods are made with mayo but for me it’s a psychological thing, if I don’t see it going into my foods, I don’t know it’s there and all is good in my world. My hubby on the other hand LOVES mayo so having to make chicken salad and knowing and seeing myself use the mayo was a big accomplishment for me.
My grandmother makes her chicken salad with eggs, celery, mayo, mustard and another secret ingredient that she refuses to tell me. Come on Grandma, spill the beans already. Anyway, since I can’t get the whole recipe from Grandma Peach, I decided that I would put my own twist to it and created my own version of chicken salad. Now, I know my children and I know that they will not eat eggs or celery mixed together in anything so I used the following ingredients because I know they will eat them:
Whole Rotisserie Chicken
2 Medium Roma tomatoes (seeded and cut into small pieces)
1 package (2 oz.) Pine Nuts – you can omit if allergic
1/2 cup of Shredded Parmesan cheese
6 Basil leafs cut into small pieces
3/4 cup Mayo – you can use more depending on your taste
1/4 cup Spicy Brown Mustard
1/2 teaspoon Ground White Pepper
Salt to taste if needed
I use a rotisserie chicken because for me it’s easy to pick up at the store and being fully cooked adds to the appeal for me with this recipe. I take the meat off the bone and use my kitchen aid with the paddle attachment to shred the chicken. If you don’t have a kitchen aid, you can always just rough chop the chicken into bite size pieces.
Once the chicken is shredded I then add all the ingredients and use the kitchen aid once more on stir speed to mix everything together. Don’t over mix or the tomatoes will break apart.
You can serve this anyway you’d like. I serve the salad on Croissants but it is also good on bagels. You can also eat this on crackers too.
